- Presentation : In the Nuit-Saint-Georges appellation, "Les Chaboeufs" is a climate of 2.80 hectares (in total). It rests on a brownish-red, stony soil. It is situated just above the "Cailles", therefore on a slightly cooler terroir. Chaboeufs are excellent wines from Nuits-St-Georges.
- Tasting :Tasting notes of black cherries and blackcurrant. A return of flavours of undergrowth and leather. The palate has a beautiful depth and is very complex. Fine tannins which lead to a finish in harmony between power and tenderness.
- Grape varieties: 100% Pinot Noir
- Harvest : Manual
- Vinification: 17 days of vatting, between 5 and 7 punching of the cap on the feet. Pumping over. After pressing, the wines are racked for 2 weeks and put into barrels.
- Ageing: 14 months for 40% in new barrels and 60% in barrels of 1, 2, 3 wines. After 14 months of maturing, the wines are racked into vats and rested for 3 months.
