Very calcareous soil
Yield: 35-40hl/hectares
VINIFICATION
Manual harvest always late, 25kg crates, destemmed grapes, no treading, transfered into vats using gravity.
Pre-fermentation maceration for 3 to 4 days
Gentle and long fermentation, native yeasts, moderate pigeage, vatting 20 to 25 days
MATURING
Maturing in cold cellars (30 to 50% of new barrels).
Later malolactic fermentation, bottled often 18 to 20 months.
Racking, one month before bottling, no filtration, no fining.
