The Estate & Samuel Billaud’s Style
Established in 2009 at his own ultra-modern estate in the heart of Chablis, Samuel Billaud has risen to become one of the appellation's key winemakers. He crafts wines that brilliantly marry texture and precision, drawing on four hectares of estate-owned, organically farmed vineyards, supplemented by rigorously selected purchased grapes (for which he determines the harvest date and deploys his own team for picking). The pursuit of perfectly ripe grapes—while preserving the fruit's vibrancy—is the absolute rule here.
Vinification & Maturation: Fermentation takes place between 16°C and 20°C in stainless steel tanks and/or older barrels (primarily 500-liter *pièces* from Chassin). The wines are then aged on fine lees for 13 months for the Petit Chablis and Chablis Village bottlings, and for 15 to 18 months for the Premiers and Grands Crus.
