Geology
The vines are located in the village of Volnay, to the south-east of the village, mainly in the ‘Les Blanches’, ‘Les Grands Champs’ and ‘Les Pluchots’ appellations. The soil is composed of bathonian limestone, stony, ferruginous and reddish, covered with brown silt. The vines are pruned using the Guyot method, with various green pruning operations such as disbudding, trellising and pollarding.
Vinification
The grapes are harvested by hand, with an initial sorting on the vines, followed by table sorting (and sometimes the use of an optical sorting machine, depending on the year) in the winery. After light crushing and destemming, the grapes are placed in stainless steel vats. A small proportion of whole grapes may be added depending on the state of the raw material. After a few days of cold maceration, active fermentation begins, with rigorous temperature control. During this phase, the wine is pumped over and/or the cap is punched down. After pneumatic pressing, the wine is placed in barrels, around 30% of which are made of new wood, for 14 months of ageing during which malolactic fermentation takes place. A month before bottling, the wine from the different barrels is blended in vats. No fining is carried out, and a light lenticular filtration precedes bottling, which takes place according to the lunar calendar. Technical adjustments may be made depending on the vintage.
Tasting
Volnay combines nobility, elegance and femininity. Its bright ruby or light garnet colour reveals aromas of violets, redcurrants, cherries and, with time, spices and cooked prunes. On the palate, it is fresh on the attack and warm on the finish, giving the impression of biting into the fruit and breathing its flesh.
