THE ESTATE TELLS YOU ABOUT IT
- Vineyard: On north-facing slopes, on limestone scree.
- Average age of the vines: Over 50 years.
- Cultivation : Traditional cultivation with soil work. No use of weed killers.
- Grape varieties : Grenache 45%, mourvèdre 30%, cinsaut 5%, "secondary" grape varieties 20% including syrah, castet, manosquin, carignan, various muscats.
- Harvesting: Done exclusively by hand, at full maturity. Sorting of the grapes in the vineyard and in the cellar.
- Vinification: Light crushing, partial destemming, pressing in a vertical hydraulic press, manual re-stemming. Blending with a proportion of bleeding juice.
- Preservation & ageing : Exclusively in wood, in small oak tuns. Kept on fine lees. Natural decanting by racking

Château Simone is a winery located in the Palette region of Provence, in the south of France. It is renowned for producing one of the region's most emblematic wines.
- The Château Simone vineyard has existed for over two centuries, and has been run by the Rougier family since 1830. The estate covers some 20 hectares, with vines planted on clay-limestone and schist soils. The grape varieties grown are mainly Grenache, Mourvèdre, Syrah, Cinsault, Carignan, and a few other local varieties.
- Château Simone is known for its traditional approach to viticulture. The vines are grown using organic methods, and the grapes are harvested by hand. The estate is also renowned for its low yields, which enable the production of concentrated, high-quality wines.
