TASTING : With an ample and structured matter this vintage is all in balance, whose notes of black fruits (blackberry, blackcurrant), associated with aromas of violet, cover a long and silky mouth, all in nerve.
Pairings: Grilled and simmered meats; leg of lamb or beef stew.
AGING POTENTIAL: Drink within 10 years of bottling
SERVING : 15 - 17°C
ASSEMBLY : 65% old Grenache, 20% Syrah, 10% Mourvèdre, 5% Cinsault.
YIELD : 25-30 hl/ha |10 hectares
LOCATION : This wine comes from several different terroirs (sand, pebbles, red clay) located in the northern part of the appellation and on the plateau of La Crau.
VITICULTURE : The vines are cultivated without pesticides or insecticides and the manure is of natural origin. The soil is worked without weed killers to maintain the aeration and flexibility of the soil.
VINIFICATION : Manual harvest with sorting on the vine. De-stemming at 80% then maceration for 21 to 28 days with daily punching of the cap.

AGEING : 80% in tuns and 20% in barrels (1/3 new), for 12 months.
