L'Oenothèque 2007 - Champagne Drappier
The 2007 vintage from the Drappier family is distinguished by its freshness and subtlety. This champagne reveals delicate aromas of white fruit and orange blossom, underpinned by a minerality typical of the limestone soils of the Côte des Bar. Made from 60% Pinot Noir and 40% Chardonnay, it benefits from meticulous winemaking: only the first pressings are used, gravity replaces pumping, and fining occurs naturally without filtration. With a low dosage of 4 g/L, it was disgorged in June 2023 after more than 14 years of aging on lees, offering an elegant and refined balance.
The Drappier house, active since 1808 on 70 hectares of limestone soils, ensures the consistency and aromatic expression of its champagnes through its mastery of the terroir. The family wine library preserves these rare vintages in the secrecy of historic cellars in Reims, thus transmitting the memory and heritage of the house through each bottle unveiled.
