CEPAGES
80% white grenache, 20% black grenache.
TERROIR
Clay and limestone with pebbles from the Corbières foothills.
VINIFICATION
Direct pressing. Settling, fermentation at 18°C.
Neutral alcohol mutage in the liquid phase during fermentation.
Alcohol percentage : 15 % Alc/Vol,
Residual sugars: 116 g/litre.
AGEING
22 years in old oak tuns to provoke its oxidation. There is an evaporation of 7% per year, i.e. more than 2/3 of the volume at the end of the ageing process. After bottling, it is kept in an air-conditioned cellar.
COMMENTS
This exceptional wine is dedicated to Aimé Cazes, father of André and Bernard Cazes, who showed them how to make great natural sweet wines. Time has done its work. It has been enriched with multiple aromas: green walnut, bitter orange, fig, dried apricot, cinnamon, nutmeg, cardamom... flavours that continue in an atmosphere of fatness and smoothness. It will blossom in a large glass, at a temperature of 15°, preferably in the company of foie gras, desserts with oriental spices or a choice Havana.
