GEOGRAPHICAL SITUATION
Located in the southern part of the Côte de Beaune, Chassagne Montrachet is one of the 5 villages making up the prestigious "Côte des Blancs". Facing East and South-East, the soil of the Premiers Crus of Chassagne is mainly composed of clay and limestone.
CHARACTERISTICS
"Les Grandes Ruchottes" is located in the south of the commune, above "La Boudriotte" and "Les Petits Clos", in the upper part of the vineyard, on a clay-limestone soil.
VINIFICATION AND MATURATION
The grapes are harvested manually in small boxes in order to preserve the integrity of the fruit. The grapes are then gently pressed and fermented in barrels of our cooperage, a third of which are new. The maturation lasts about 15 months on fine lees before the preparation for bottling.
