Geographic location
The Côte Chalonnaise is a natural extension of the Côte de Beaune, south of Santenay. It encompasses five appellations: Bouzeron (Aligoté), Rully, Mercurey, Givry, and Montagny. The Givry vineyard extends around the eponymous village and the hamlets of Poncey, Cortiambles, and Russilly.
Terroir characteristics
The brown calcareous or calcic soils, resulting from the decomposition of Jurassic rocks, give Givry wines their supple, rounded, and elegant profile. These unique geological conditions favor the beautiful expression of Chardonnay.
Vinification and aging
Harvesting is carried out by hand in small crates, preserving the integrity of the berries. The grapes are gently pressed and then fermented in oak barrels, about a third of which are new, from the house's cooperage. Aging lasts approximately 15 months on fine lees before bottling.
