The palest of the Ploussards is the 2023 Ploussard Chambines, which is almost a Blanc de Noirs. From a low-altitude plot (affected by frost in 2024), this wine is made from 35-year-old vines (clones). This is their youngest plot, planted on red marl soils at an altitude of 20 meters. The wine is quite reduced, with notes of crushed match, gunpowder, and toasted sesame seeds reminiscent of oak. The palate is more ethereal, with 10.5% alcohol, the minimum allowed by the appellation; it is varietal and supple, with almost imperceptible tannins. 5,150 bottles produced. Bottled in August 2024.

The Ploussard "Chambines" cuvée from Cellier Saint Benoit is a 100% Ploussard (also called Poulsard) red wine, produced from a well-exposed plot on the marl and clay-limestone soils of the Jura region, within the Arbois-Pupillin appellation. This Ploussard is characterized by a pale to light ruby color, sometimes with copper highlights, and fine, delicate aromas of red fruits: wild strawberry, raspberry, and redcurrant; supported by a fresh acidity and a light, easy-drinking texture on the palate. The winemaking process is minimally interventionist, with hand-harvesting and natural fermentation, which allows the pure expression of the fruit and the Jura terroir to shine through without excessive heaviness; it is an elegant wine that pairs easily with fine charcuterie, cold poultry, or mild cheeses.
This wine also reflects the identity of the estate, managed by the Benoit family for several generations in Pupillin, with environmentally friendly viticulture and particular attention paid to plot-by-plot management. In certain years, such as 2023, it ranks among the most delicate and lightest cuvées, almost a "blanc de noirs," with very discreet tannins and great aromatic finesse; the wines produced are often described as delicate, expressive, and with a freshness typical of the Jura, suitable for drinking young but also capable of being aged for a few years depending on the vintage.
