Crozes Ermitage 2000 Les Varonniers - Chapoutier
Color: very dark garnet.
Nose: very ripe red fruits, blackcurrant and raspberry, then liquorice.
Palate: ample and firm, powerful tannins, jammy and vanilla finish. Depending on the vintage, the wine can be kept from 30 to 60 years, or even from 50 to 75 years.
The sommelier's advice: Terrine of marcassin. Hare stew. Saint Nectaire fermier.
Grape variety : Syrah. To elaborate the "Varonniers", we have chosen our oldest vines of Crozes-Hermitage (more than 60 years old on average).
Harvest : Manual harvest at maturity.
Soil : Granitic hillsides facing south-west at the end of the Hermitage hill and river terraces on the Chassis.
Vinification: Vinification in small closed concrete vats. The vatting is long and lasts nearly a month, to polymerize the tannins. Only the run-off wine is used.
Ageing: 100% in oak barrels, with a percentage of new barrels, from 14 to 18 months.
