M. Chapoutier now produces the most diverse and complex wines in northern Rhône. Since Michel Chapoutier took control of this long-established company in 1988, quality has skyrocketed.
All the vineyards are now working in biodynamic viticulture and now all the grapes of Hermitage and Châteauneuf du Pape are totally de-stemmed before fermentation. In the past, Chapoutier wines were criticized for their time spent in old wood. Michel Chapoutier threw away the old chestnut foudres. Today, they spend a maximum of 18 months in small oak barrels, a third of which are new.
Chapoutier wines are bottled without filtration to preserve their character. The production of "tête de cuvées", among which La Mordorée is made from 60-year-old vines of the Côte Blonde and Ermitage La Pavillon from 70-year-old vines at the base of the Bessards, is crucial to Michel Chapoutier's philosophy. He produced the Hermitage Vin de Paille for the first time in 1990. It is by far the best sweet wine produced in the Vallée du Rhône.
The Chapoutier Single Vineyard Selections are among the most famous and rarest wines of the entire Vallée du Rhône. Their precisely delineated provenance is the ultimate celebration of the notion of terroir, and more specifically the terroir of the Hermitage hill. These single vineyard wines of l'Ermitage are identified by the ancient name of Ermitage.
