Appearance: Intense purple.

Nose: Complex and refined; blackcurrant and plum, followed by notes of roasted coffee, cherry, and Morello cherry.

Palate: Spicy (liquorice) and fruity notes that evolve over time.

Sommelier’s recommendations: Beef stew (*daube*), rib steak with red wine sauce (*marchand de vin*), rabbit with olives.

Grape variety(ies): Blending grape varieties is a hallmark of the Châteauneuf-du-Pape appellation. "La Bernardine" red is primarily composed of Grenache, with smaller proportions of Syrah and Mourvèdre. Grenache contributes a sense of sweetness, lending the wine elegance, silky tannins, and great finesse.

Harvest: Rigorous sorting takes place during the harvest. This sorting process—mandatory to qualify for the appellation—ensures only the best bunches are selected.

Soil: Quaternary terrace featuring large, rounded pebbles on the surface, originating from the ancient bed of the Rhône River.

Vinification: Châteauneuf-du-Pape wines are blends; consequently, vinification is generally tailored to the specific grape varieties and fruit. Traditional winemaking methods are used, with fermentation taking place in sealed concrete tanks. The average maceration period is three weeks at high temperatures to ensure optimal extraction of color and tannins.

Maturation: Lasts 15 months and takes place entirely in concrete tanks; this allows for better oxygenation of the wine, helping to preserve its freshness and aromas.
