Location & Climate: Plots situated at the foot of the Aurélien Mountains and Montagne Sainte-Victoire, in the communes of Pourcieux and Pourrières, enjoying a Mediterranean climate.
Terroir: Clay-limestone soils with sandy tendencies; shallow and offering excellent drainage.
Grape Varieties: Grenache, Syrah, and Rolle (Vermentino).
Harvest: Mechanical night-time harvest to preserve the berries' liveliness and aromatic freshness.
Winemaking & Maturation
Method: Produced via direct pressing with a period of contact with fine lees (*stabulation*) to enrich the texture.
Fermentation: Temperature-controlled alcoholic fermentation at low temperatures (16–17°C) to reveal the fruit's intensity.
Maturation: Carefully managed maturation in stainless steel tanks to prioritize the wine's purity and vibrancy.
Alcohol Content: 12% vol.
Appearance: Pale, crystalline hue; radiant and very clear.
Nose: An alluring bouquet of small red fruits (crisp strawberry), peach, and grapefruit, enhanced by delicate floral notes of white blossoms and hawthorn.
Palate: Fresh, supple, and light on the attack. The texture is airy and luscious, leading to a thirst-quenching finish with delicious fresh strawberry notes.
Suggested Pairings: Ideal with crayfish risotto, grilled shellfish, or Mediterranean summer cuisine.
Serving Temperature: 11°C.
