Terroir: Kimmeridgian Jurassic limestone soil and chalk.
Vineyard: Sustainable viticulture.
Blend: 80% Pinot Noir, 15% Chardonnay, 5% Meunier. 40% reserve wines.
Vinification: First press, unfiltered, unclarified, low sulfites (less than 30 mg/L).
Dosage: 5 g/L (dosage liqueur aged for 10 years in wood).
Disgorgement: Date engraved on the glass.

With a very high proportion of Pinot Noir, it offers an experience akin to a Blanc de Noirs. A Champagne of great aromatic richness, it opens with aromas of stone fruits, such as white vineyard peach. A spicy note heralds a powerful, complex palate. A vinous Champagne of great complexity, featuring a characteristic touch of quince jelly.
Serving:
Ideal as an aperitif. Pairs well with white meat, firm-fleshed fish, or Chaource cheese. Serve at 7°C.
