Geographic location
Fixin is one of the first villages in the Côte de Nuits heading south, marking the beginning of this prestigious winegrowing strip that extends to the Côte de Beaune. Clos Moreau is a monopoly located in the heart of the village. The white Fixin from Maison Louis Jadot has long remained a rarity in the appellation, making it a unique and sought-after cuvée.
Characteristics
The vineyard is located between 270 and 360 meters above sea level, on gentle east-facing slopes. The soils, mostly limestone with some marl veins, favor a refined and elegant expression of the Chardonnay. This wine is distinguished by a golden yellow color with brilliant highlights and an expressive nose reminiscent of fresh apple, candied orange, and apricot. The palate is round and generous, balanced by a lively and structured acidity.
Vinification and Aging
The grapes are harvested manually in small crates to preserve their quality. The grapes are gently pressed and then fermented in oak barrels from the house's cooperage, a third of which are new. Aging lasts approximately 15 months on fine lees before bottling.
