“2019 was a more concentrated and powerful year, warmer and drier; it was saved by the 80 liters of rain in the first fortnight of September, and they tried to select vineyards at higher altitudes to get more freshness. They reduced the amount of new barrels (55%) and increased the use of foudre (45%) to age the Macán 2019. It was fermented in stainless steel with 10% of their own yeasts. It has a moderate alcohol content of 14%, soft acidity, good freshness and balance. The year 2019 was dry and hot, and the vinification was gentle to avoid hard tannins. The wine is very powerful and dense, with great structure and lots of tannins. The oak is still perceptible in the aromas. Leave it in the bottle a little longer and enjoy it with powerful dishes. It was bottled in August 2021.”
