Vertical Pressing: What is it?
A vertical press presses the grapes from top to bottom with gentle, progressive pressure. This produces a clear, elegant juice with less solids. This traditional technique, used until the 1960s, preserves the aromas and finesse of the wine.
It is primarily used for delicate white wines to maximize the purity and quality of the juice.

Terroir
The name of this cuvée refers to its unique vinification using a vertical press. This type of press, used from the Middle Ages until the 1960s before being replaced by horizontal mechanical and pneumatic presses, has been reintroduced and defines the style of this wine. We cultivate several small plots of Aligoté in the heights of the Hautes-Côtes at over 400 meters altitude, blended to create this wine. Its complexity comes from a great diversity of soils, marly and clayey over limestone. We are fortunate to work with old massal selections of the Aligoté Doré grape, which are low-yielding and offer excellent maturity.
Vineyard management
The plots are either low traditional vines with 10,000 plants per hectare trained in simple Guyot or in lyre shape following double Guyot pruning.
Vinification and aging
Harvesting is manual at optimal maturity. The vertical press allows slow and gentle pressing, producing clear, high-quality juice while avoiding settling. Vinification takes place in 600-liter barrels. Aging is long on the lees for about 12 months, with one-third in new barrels, followed by several months in tanks on the lees before bottling. The wines are unfiltered, unfined, and not cold-stabilized, and may naturally show some sediment.
Tasting notes and food pairing
The nose offers a rich aromatic palette of grapefruit, lychee, and honeysuckle. The palate is precise and intense, with beautiful complexity and mineral freshness. This gastronomic Aligoté pairs perfectly with seafood platters, beechwood-smoked salmon, or aged goat cheese. It can be enjoyed over three to seven years.
