An original cuvée made from 100% Fromenteau (the old Champagne name for Pinot Gris), a rare grape variety once widespread in the Aube region. This champagne pays homage to the “grey” wines of yesteryear with a rich, silky, and full-bodied style, offering a golden juice with notes of ripe and forgotten fruit.
Made from a blend of the 2019 and 2020 vintages, this wine comes from a plot cultivated organically on the Kimmeridgian limestone soils of Urville, imparting a beautiful minerality that balances the exotic roundness of the grape variety.
Vinified without chaptalization or filtration, with minimal sulfur and zero dosage (Brut Nature), it benefits from three years of aging on lees and maturation in local oak demi-muids.
Tasting notes: Pale gold color, floral aromas, notes of mirabelle plum and apricot, a full and elegant palate.
Pairings: Spaghetti with bottarga, summer vegetables, poultry with mild spices.
Serving temperature: 7°C.
